When having 3, 4 or 5 cards in my hand, do I add them up individual
or should I automatically know the total?
While trying to add them up and also remember the running count
it can throw me off.
That would make you look dumb which is a good cover.
...Eventually, with experience, you will be able to maintain and calculate the count as well know the total of your hand. You may not believe it at this point, but all the above will be done unconsciously, like riding a bike or driving a car.

I can't add more than three cards unless it is an easy pattern. It takes me too long anyway. If I have three or four cards down and it is taking me more than a few seconds to add, I'll just ask the dealer as was suggested. They are very happy to do it, it makes you less than brilliant (easy for me), and it can buy another second or two to make a playing decision or to do the count on the rest of the cards on the table.
I always say, "hey, you busted!" Sometimes they believe you and push the checks your way. Can't best that kind of EV.

This will usually get you the answer from the dealer AND give you time to recall the count, then add up your hand total. As Cobb says, if you trust what pops into your head, you'll find it's right. Just like seeing 5 cards and knowing the count immediately, many times you'll know your hand total immediately. At least you'll know if you busted, should stand or hit. You may have to total them after you've already given your signal just to be sure you get paid.
