For comparison purposes (and mathematical simplicity) most people assume 100 hands per hour, which is often reasonable unless you are at a crowded table or there is something slowing down the dealer (like very slow players, side bets, mistakes, "helpful hints" from the floorman, etc.). A skillful player might get 200 hands per hour if they are playing alone, but that is not a realistic assumption in most cases. Once you get more experience you will have a good idea of how fast you can play and what kind of conditions you can expect at your favorite casinos.
