Do you intend to make money at this venture off of entry fees? Most tournaments pay out as much or more than they collect. They are sponsored by casinos for the benifit of getting players to their live games.
In the most common type of tournaments you have about 6 players to a table. About 30 rounds are dealt with first base rotating using a moving button (like the dealer in poker). At the conclusion of the 30 rounds (or whatever) the top bankroll or bankrolls advance to the next round. Usually a couple of places at the semi-final or finals table are left open and are filled via a drawing. This keeps the eliminated players hanging around the casino, hopefuly gambling, for the entire duration of the tournament.
