I can't speak for Vegas, but I can speak about the Midwest. In the mid 2010's $5 games were common in smaller casinos, $10 at mid level, and $15 at slightly bigger casinos.
However, inflation has reared its ugly head in recent years and caused $10, $15, and $25 minimums to be more commonplace, especially during Covid-19 season, before they lowered the table limits and allowed more players again.
In my experience, your best bet for lower table minimums is to play during the early morning hours or during weekdays, when the casinos are less packed.
Unfortunately, those days also open the door for casino heat, when the floor and surveillance has nothing better to do than to scrutinize your play or have a conversation with you.
