Payment for large wins?

Suppose you win a large sum of money at a casino counting cards. When you cash in your chips, do you get back cash or does the casino issue a check? If they issue a check, is there a risk of them stopping payment on the check before you are able to cash it because they review the tapes and determine you were counting?
