Burning the Tables in Las Vegas by Ian Anderson is the best, IMO. Stanford Wong's Blackjack Secrets and Schlesinger's awesome BJA2e are must-haves too.
The demo versions of the commercial simulators at this site may help you-unfortunately non-commercial applications just don't cut it. You will have to invest in a good piece of software at some point-if you are going to count cards then your bankroll has to be large enough that this will be a negligible cost anyway.
Ian Andersen's "Turning The Tables On las Vegas" is generally considered the classic text on cover.
