You do not have to go back too many years and the Hilton perhaps had the best double deck game in town and mainly playable shoe games. For VP players they had a wide array of decent machines also.
For many years I played there and their blackjack tables had a real good number of high betting players who played horribly to almost decent basic strategy and were crowded. Considering that this was the Hilton and not some new touristy or some new in crowd place, my opinion was that good gaming was paying off for them. They just had a much bigger percentage of ploppy high rollers than the demographic of the place rated.
My version of their demise begins with their introduction of Mindplay21 to the place. Designed to cut casino pit and eye staff, along with customer comps, catching bet cappers, and novice AP's, (also used for cheating but not at the Hilton) the thing delivered just what the genius who never thought about his players and staff, deserved: A disaster. It slowed down the game, rumor had it that some pit staff sabotoged it and just as importantly no one there, with power, ever took into consideration the superstitions of their clientel and the fact that the Hilton had nothing to offer them if they were not comfortable on a Mindplay table. Their high rollers, not even understanding the capabilites of the device, did not want to play with some new gizmo at their table. They fled, became customers of places like the big B, Wynn, Venetian etc, and the sacred drop dropped and dropped and dropped, till they removed Mindplay but it was too late.
Trouble was the Hilton was unable to bring their old customers back so the next move was with their reduced drop they decided to overcome this by increasing their hold by increasing the house edge on all their games. That has not worked either, as the Hilton, located close to the wrong end of strip, has nothing that will attract enough ploppies with fat wallets to ever bring their blackjack numbers back up to where they were.
