Some dealers will do that, but all you have to do is say "wait, I am thinking about it." IE I generally play perfect BS after a lot of practice. If the dealer has a 6 up and I get a 16, he will pass me right by knowing I am going to stand.
A few will get a bit too predictive however and pass you by with your 12 vs his 4, say, where there is an advantage point where you might want to hit the 12 when the count is low, which is also a good "cover" action at times as it will draw comments from other players at the very least. And might even make one or two leave, which is even better. :)
He also understands that no normal person would hit a hard 17 or better, ever, except when playing in a BJ tournament where the strategy changes quite a bit. I doubt he was being obnoxious or trying to rush you, he was just anticipating good play by you and moving the game along. You can always tell him to "please don't pass me and assume I will stand..."
