From what I have read...
..you are more likely to get cheated by a dealer then the casino specifically (assuming the casino you are referring to is regulated). The dealer method is most likely going to come in a hand held game with them dealing seconds. At any rate, cheating by casino's or anyone in it has become increasingly rare. The casinos have too much to lose, so they are watching their people as closely (if not closer) then they do the patrons. Technological advancements have only made it easier to catch...
If you really are worried about switching, the only way I could think of is to pick a card you think they have put in more of and do a side count, but that is mentally taxing and just doesn't make sense to me. There is so much competition out there, if you really think a casino has been, will or would cheat you, just do not play there.
