I prefer to play alone. Is it best to play head to head or two hands with Hi Lo?
Playing alone is good because you get more hands per hour, thereby increasing your win rate. Two hands are better, but, unless you reduce your bet size, you will increase your risk.
What are thoughts on beginning a progression if the count is +5 or better?
From a mathematical view, this makes no sense. Depending on the progression, you risk overbetting or underbetting your bankroll.
