If I have a number of different expectations (in units won per 100 hands) for a bunch of different games I have played (for example, SD, DD, Shoe) can I take a weighted average of them with respect to the number of hours played at each game to find my OVERALL expected units won per 100 hands?

Provided your 'unit' and your hands per hour are the same for each game.
If you have one session of 1 hour with an EV of $90 and another session of 3 hours with an EV of $150 ($50 per hour), then you total EV is 90+150= $240. If you wanted a per hour figure, you would divide by the total number of hours, 4, to get $60 an hour.
You can add the Variances in the Same Way.
What MathProf did was convert the values to the same units of measure (in this case $/hour) before taking the weighted average. You can use any unit of measure you like, as long as it is the same for each value.
Unless you use the same unit size in all your games, you need to convert from "units" to your local currency. Unless all your games are played at the same speed, you need to convert from "per 100 hands" to "per hour" (or alternatively, take the weighted average with respect to 100's of hands played - not hours played).
