There is a midpoint between 1 & 2
1. You go in with the attitude that you will get barred every time you play and just
stick it in their face until they bar you and then move on to the next club.
2. You play a LOT of cover and make up for it in ev from getting comps.
You have the attitude that there is a very good chance of getting barred every time you play and use some minimal amount of cover. In doing so you'll find a few casinos that will tolerate your action for a very long time. These few casinos become your regular rotation for a while as you try to cultivate new places. Hopefully you can add new places at the pace that you lose your regulars. 18 months or so after getting barred some place you just go back and try to set up with a new identity.
Of course, most successful pros use #3 on your list. They may start out with straight counting but a year or two into it they'll make more than half their gambling income elsewhere.
