First, I'll answer your question: The second game is light-years better than the first. (I assume a six-deck game, which you don't mention specifically.)
Now, can you answer a question: Did you dream about the second game, or does it actually exist somewhere? :-) If it exists, I'd rush there, because it isn't going to be there too much longer. :-)

While some indicate that pen is important, it does not seem to be taken into account in the math calculations.
How much weight is given to pen and what is the break point that determines how much it overrides the math calculation?

We all know that at many places pen is dealer dependent. For several years I played a good S-17 6D, hand shuffled shoe game at a place especially when this one dealer was working. My opinion was that he just lazy and the less often he shuffled, the happier he was. He would cut perhaps 2/3 of a deck.
Though he still works at the same place the last several years, at least when I am there, he is at a CSM table so perhaps someone decided he cut too little. It was a treat while it lasted.
