The way we were taught:

Let's say you have a $293 bet that gets a blackjack.

Basically, you make a big pile of chips:
Step 1: Get $293 in chips to match the original bet, color for color.
Step 2: Add 50% of $200
Step 3: Add 50% of $90
Step 4: Add 50% of $3

I have no idea how much that is, but I know it's $293 + $100 + $45 + $1.5 which I now know is $439.50.

But if you build it in stages like that, the camera can verify that you are paying correctly without having to do the math themselves.

From the sounds of the instructor I had, it seemed like a pretty standard practice for places that DIDN'T touch the original bet.. that is, some places will take a $10 blackjack, dunk the two reds and return a $25 chip.
